Ingredients

    1 lb beef chuck tender (thinly sliced)
    2 Tbsp canola oil
    4 Cups low sodium chicken broth
    1 Cup water
    4 Oz rice noodles
    2 tsp low sodium soy sauce
    4 Cups bok choy (chopped)
    1.5 cup bean sprouts
    4 Tbsp basil

Directions

brown beef in pan with canola oil 2 to 3 minutes. remove from pan and then add bok choy to oil and wilt for 2 to 3 minutes. add broth and water and bring to a boil. add rice noodles cook 4 minutes. add beef back to soup and 2 t soy. cook 2 to 3 minutes. serve 1 and 1/3 cup and top with sprouts and basil.

Serving Size: makes six 1 1/3 cup portions
