Sooo yummy and juicy! You won't believe it's not fried! Sooo yummy and juicy! You won't believe it's not fried!

Ingredients

    1 5oz Boneless, skinless chicken breast
    4.5 tsp Panko bread crumbs
    1 Tbsp Low fat plain yogurt
    3/4 tsp Coconut oil (or other oil of choice)
    1 Garlic clove, minced
    Chives

Directions

Whisk together the mustard, garlic, yogurt and oil. In a separate bowl, mix chives with bread crumbs. Dip the chicken into the yogurt/mustard mixture and then roll in breadcrumbs. Place on a cookie sheet sprayed with nonstick cooking spray and bake at 475 for 20 minutes, or until coating is golden brown and the juices from the chicken run clear.

Serving Size: Makes 1 5oz chicken breast
