Introduction

Number of Servings: 24

Ingredients

    1 Stick Earth Balance or 1/2 C Coconut Oil
    1/2 Cup milk, rice milk, almond milk or soy milk
    1 Cup Brown Sugar
    1 Cup Splenda (I used a generic version)
    3 TBL Cocoa
    1 TBL Instant Decaf Coffee
    1 TBL Vanilla
    1/2 Cup Peanut Butter (I used creamy)
    3 Cups Oatmeal (I used Instant)

Directions

Mix first 6 ingredients in a medium saucepan.* Boil for 1 minute.

Add the peanut butter and vanilla. Mix quickly until peanut butter melts, then add the oatmeal and mix until well blended.

Drop spoonfuls on tin foil, wax paper or parchment. Allow to set and cool completely.

Serving Size: Makes 2 dozen 3 inch cookies.
