Introduction

Instead of white fish you could substitute salmon,smoked cod or well drained canned fish.

The filling also makes a tasty Fish Casserole - see the recipe after the Pastry recipe
Or do as I did - make 4 pasties using half the filling and half the pastry and use the rest of the filling the next day as a Fish Casserole. Bingo!! 2 great meals from one recipe!!

Ingredients

    450g perch fillets, skin off (or any firm white fish)
    2 Tbsp water
    1/2 red onion, diced
    1 medium carrot, grated or diced very small
    1 medium potato, peeled & diced small
    1/3 cup peas
    150g pumpkin, peeled & diced small
    1 tsp Moroccan seasoning
    1 quantity wholemeal ricotta pastry (or 4 sheets frozen shortcrust pastry)
    1 egg, beaten
    1 tsp sesame seeds

Tips

Note: The nutritional values are for the wholemeal ricotta pastry - if you use bought shortcrust pastry you need to recalculate the nutritional values


Directions

1 - Pre-heat oven 190˚C.
2 - Dice fish fillets into small pieces.
3 -Place the onion, potatoes, peas, pumpkin, and carrots in a microwave dish, sprinkle with water and cook until tender in microwave oven, drain well
4 - Steam white fish until just cooked, drain well
5 - Combine the fish with the vegetables and Moroccan seasoning and mix well. Set aside to cool
6 - Roll the pastry out using the minimum flour and cut 8 circles 7 - 8" diameter from it
7 - Place 1/2 cup of the fish mixture onto centre of each pastry circle and brush the edges with the beaten egg. Fold the pastry together over the mixture, crimping the edges to enclose securely.
8 - Brush the surface of each pastie with a little egg mixture and sprinkle with sesame seeds.
9 - Place pasties onto a lined oven tray and bake in the pre-heated oven for 15 - 20 minutes until puffed and golden.. Serve hot
