Ingredients

    500g turkey mince (lean)
    2.5 cups of shredded red cabbage
    1 grated carrot
    1 finely chopped onion
    2 crushed garlic cloves
    2 tsp- tbsp grated ginger root (easier to do if frozen)
    1 tbs fish sauce
    2 tsp sugar
    2 tbs soy sauce (light)
    50g vermicelli noodles
    juice and grated rind of 1 lime
    good healthy bunch of coriander

Directions

Oil in pan
saute onions, add turkey and brown
Mix sauce on side (garlic, ginger, lime, fish sauce, sugar, soy sauce)
Add carrot & cabbage
When just wlted, add sauce
Make Vermicelli on side as per packet instructions
Just before taking off meat, add coriander and vermicellil noodles

Serving Size: Makes 4 servings - can make more vermicelli
