Introduction

I was in the mood for a cheese steak but knew that it wouldn't be very "healthy" the original way so....here's what I came up with! I was in the mood for a cheese steak but knew that it wouldn't be very "healthy" the original way so....here's what I came up with!

Ingredients

    1 c onions (diced)
    1/2 c green bell peppers (diced)
    1/2 c red bell peppers (diced)
    1/4 c orange bell peppers (diced)
    1/4 c yellow bell peppers (diced)
    1 Steakumm
    2 tbsp Simply Kraft Light Sour Cream
    1/2 c shredded swiss cheese
    3 corn tortillas
    1 tsp black pepper
    Great Value Extra Virgin Olive Oil Cooking Spray

Tips

I added the cheese to the tortillas first so that the pepper mix stayed on the tortillas better. Also, you can choose whatever veggies you may want, cheese too (I didn't have any other cheese available at the time). And of course the Steakumm is optional too.


Directions

Preheat oven to 350 degrees, place corn tortillas flat on an ungreased cookie sheet. When done preheating, place cookie sheet in the oven for about 8-10 minutes (or when tortillas are crispy to your liking). After dicing all of the peppers and onion, put in a frying pan and saute with the olive oil cooking spray. Add black pepper as they cook. When peppers and onions are sauteed to your liking (I like mine softer rather than crunchier), push them to the side of the frying pan and add the Steakumm (only 1 needed). As the Steakumm cooks, shred and mix with the peppers and onions. Remove from heat. Take tortillas out of the oven and sprinkle the cheese on them. Add pepper, onion, Steakumm mix to the tortillas. Then top with sour cream. Voila! I thought it tasted pretty good and was VERY filling.
