Ingredients

    5-7 potatoes diced (i used red)
    1 can clams and liquer
    1Tbs celery seed (or 1 cup diced celery)
    1 Tbs better than boullion vegetable base
    2 tsp garlic powder
    2 tsp salt
    1 tsp pepper (more later if needed)
    6 cups water or until potatoes are covered and start to float.
    1-2 cups skim milk (or other milk/cream) once potatoes are just soft
    seasoning to taste
    thicken with corn starch if desired.
    top with whole wheat croutons if desired.

Tips

this soup actually cooks fast on the stove top because the potatoes are diced. Fresh diced onion and celery is a great addition and can be sauted first. If your calorie budget allows for cream, butter, or croutons...it boosts the flavor factor for sure.


Directions

add everything to a pot except milk. Bring to a boil then turn down to simmer and slow cook until potatoes are tender but not mushy. Add enough milk to replace evaporated water and make it your desired consistency. Add additional seasoning as needed and turn the heat up to medium to heat up the milk but not scorch it.
