Tasty whole wheat pistachio pancakes!Make sure the stevia is cooking stevia and you use 2 tbsp of that. For the eggs, separate the yolks from the whites.

Ingredients

2 cups whole wheat flour
2 tbsp cooking stevia
2 servings benefiber powder
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup unsweetened soy almond milk
1/4 cup skim milk
2 large eggs (separated)
1/4 cup I can't believe it's not butter (melted)
pam cooking spray
1 packet sugar free pistachio almond pudding mix
1/4 cup grapefruit juice
Tips
Top with fat free reddi whip and sugar free syrup!

Directions
1. Combine flour, salt, stevia, 1/2 packet of pudding, baking powder, baking soda, benefiber powder in a bowl.
2. In a separate bowl mix together milk, almond milk, egg yolks, and melted butter, 1/4 cup squeezed grapefruit juice.
3.Carefully blend in dry ingredients.
4. In a mixer or separate bowl, beat egg whites till stiff peaks form.
5. Fold in egg whites to separate ingredients until combined.
6. Scoop 1/4 size batter onto skillet and cook 2 mins on each side.
