Ingredients

    2 - 3 ounces fully cooked Chicken Breast

    2 cups shredded lettuce

    2 tablespoons (low fat/low cal) Creamy Caesar dressing

    1/2 cup cucumber (with peel)

    1/2 cup red ripe tomatoes

    1/4 cup shredded cheese

    *optional ingredients
    caesar croutons
    1/2 cup mandarin oranges (drained)

Directions

1. Cut chicken into bite size pieces

2. Combine all ingredients (except oranges) into a large bowl.

3. Lightly toss - making sure dressing is evenly distributed. Top salad with mandarin orange pieces & croutons.

Salad is enough for ONE serving.
