Ingredients

    Fish fillets 1 lb - what ever type you want. For nutritional information I used sole.
    Olive Oil, 1 tbsp
    Bread crumbs, dry, grated, plain, 1 cup
    Dill weed, dried, .5 tsp
    Salt, .5 tsp
    Onions, raw, .25 cup, chopped
    Celery, raw, .25 cup, diced
    Carrots, raw, .25 cup, chopped
    Mushrooms, fresh, .25 cup, chopped
    Lemon juice, .5 tbsp

Tips

I use any veggies that I happen to have in the fridge at the time. These are just the ones my mother used to create the recipe.


Directions

Saute onion in oil until tender. Turn off heat and add all other ingredients ending with the lemon juice (except fish). Spray 9 by 9 baking dish with cooking spray. Create the bottom layer with half the fish. Sprinkle half the filling on top of fish. Place the remaing fish on the filling. Garnish with the remaining half of the filling. Bake at 350 for 30 minutes covered, and 30 minutes uncovered.
