Ingredients


    1 can black bean (rinsed) 3.5 cups
    Mangos, 1 fruit without refuse
    Onions, raw, 1 medium (2-1/2" dia)
    Jalapeno Peppers, 1 pepper-finely diced-to taste
    Lime Juice, 2 lime
    *Lime Zest, 1 tsp
    Yellow Sweet Corn, Canned, 1 can (12 oz)drained
    Red Ripe Tomatoes, 1 large whole (3" dia) chopped
    *Cilantro-to taste
    Avocados, California (Haas), 1 fruit without skin and seed

Tips

We eat this sometimes on top of a bed of Romain or with tortilla chips. For the salad, I will sometimes mix together some greek yogurt, lime juice and cilantro for the salad dressing.


Directions

Rinse black beans, drain the corn, chop the tomato, cilantro, mango and avocado, and finely dice the jalapeno. Place all in a big bowl. Squeeze the juice of 2 limes over the salad and zest one of the limes in bowl. Mix together. Salt and pepper if needed
