Cajun Shrimp Soup
2 cups Green Onions
2 ½ cups Bell Pepper
2 cups Celery
2 tbsp Garlic
4 tbsp Country Crock Margarine
4 cups V8
4 cups Tomato
4 cups Clamato
1 can Rotel
4-6 tbsp Italian Seasoning
2 tbsp Tony Chachere’s Creole Seasoning
2 tsp Red Pepper
3 cups yellow Squash
3 cups Zucchini
10oz bag Okra
½ cup Minute Rice
2lb bag Raw Shrimp
2 cup Fresh Cilantro
Directions
Sauté Green Onions, Bell Pepper, Celery and Garlic in margarine till soft. Add Juices Seasoning and Rotel bring to a boil. Add Squash, Zucchini and Okra cook till done.
Add rice cook 10 min’s. Stir in Shrimp and Cilantro, bring to a boil then take off heat set aside for a few minutes till Shrimp is done.
