Ingredients

Chicken Breast 3 breast, bone and skin removed
Onions, raw, 1/2 cup, chopped
Garlic, 2 cloves, minced
Extra Virgin Olive Oil, 2 tbsp
Cottage Cheese, Nonfat, 1.5 cup
Egg, fresh, 1 large
Parsley, dried, 2 tbsp
*Spaghetti/Marinara Sauce 1 cup
Spinach, fresh, 2 cup
*2% Reduced Fat Mozzarella Cheese, 1 cup
*Feta Cheese, 1/4 cup
*Cheese, Parmesan, Grated, .25 cup
*6 no-boil lasagne noodles
Directions
Preheat oven to 425
Chop chicken into bite sized pieces. Heat olive oil in a large skillet. Cook chicken, onions and garlic on medium heat for 5-7 minutes until chicken is just starting to brown, but not cooked through. Remove from heat.
While chicken is cooking, stir together cottage cheese, egg, and parsley in a small bowl. Set aside.
Also, blend together Mozzarella, Parmesan, and Feta cheeses in another bowl and set aside.
You are now ready to assemble your lasagna. Ladle a couple of spoonfuls of spaghetti sauce into the bottom of an 8x12 baking dish and spread evenly over bottom of pan.
Place 3 lasagne noodles in dish. You may have to turn or break the noodles depending on the shape and size of your actual baking dish. Top the noodles with 1/2 of the cottage cheese mixture and spread evenly. Add 1/2 of the chicken mixture. Spoon 1/2 of the remaining spaghetti sauce over chicken, then lay 1/2 of the spinach over the sauce. Sprinkle 1/2 of cheese on top. Repeat Layers.
Cover loosely with tin foil and bake for 35 minutes or until noodles are tender. Remove foil and bake for 10 more minutes or until cheese is bubbly. Cut into 8 pieces, and enjoy!
