Introduction

Number of Servings: 8

Ingredients

    2 tbsp Olive oil
    1 cup diced onions
    1 cup of each (red, green, orange & yellow) bell pepper
    6 garlic cloves
    1 tsp ground cumin
    1 tsp cayenne pepper
    2 tbsp tomato paste
    14oz turkey sausage
    4 cups chicken stock
    1.5 cup brown rice

    Optional: green onions for garnish

Tips

Using a chopper will cut down half of the prep time in cutting the veggies. This recipe called for 2 cups of bell peppers, instead, 1 bell pepper of (orange, yellow, green and red) were used for flavoring and vegetable value!


Directions

1) Place all vegetables on a table.
2) Grab a knife and cutting board - if cutting by hand - or- grab your chopper and begin to chop vegetables!
3) Chop onions, peppers and garlic.
4) Set them to the side or in a bowl.
5) Cut sausage and set to the side.
6) Place a large saucepan on the stove over moderate heat.
7) Add olive oil (canola oil can be used).
8) Once heated, add onions.
9) After cooked and caramelized after 5mins, add peppers, garlic, cumin and cayenne to cook for another 3-5mins.
10) Add tomato paste and sausage then stir.
11) Slowly pour stock and bring heat to a boil.
12) Stir in rice and cover then reduce heat to low.
13) Cook for 30mins or until rice is done to your desire.
14) Spoon into bowls and garnish with green onions...if you like :)
15) Serve warm & enjoy!!!

    Made this last night. Really spicy. Next time I make this I'm going to add a pound of chicken breast chopped up. - 8/14/12
