Simplest cookies ever, and quite healthy for a dessert. Can make small or large cookies, or muffins, or bars, or whatever your heart desires! Great for the fall. Ingredients

    1 large [29 oz] can pure pumpkin (NOT pumpkin pie filling)
    2 boxes of cake mix (I typically use 1 basic, like white or yellow, and 1 gingerbread cookie or spice cake mix)
    1 bag chocolate chips

Tips

-You can make a smaller recipe with 1 small can of pumpkin and 1 cake mix, with or without the chocolate chips.
-With the chocolate chips included, smallish sized cookies are only 90 calories. omitting chips still leaves the cookies amazing and further reduces calories
-No, you do NOT prepare the cake mixes according to package directions, the pumpkin replaces all wet ingredients!
-These cookies are super moist due to the pumpkin, and practically never burn in the oven. I've forgotten about them and left them in the oven for 45 minutes before, and it just dried them out a little. So don't be afraid to cook them longer, especially if they're big cookies!


Directions

preheat oven to 375 degrees F.
mix all ingredients together well in a bowl.
spoon 12-15 balls onto cookie sheet. *they don't spread much, so they can be pretty close together
or dollop in muffin tin, lightly greased.
cook for 12-18 minutes, or until a fork/toothpick inserted in the middle comes out clean

Serving Size: yields 5 dozen (smallish) cookies
