Ingredients

1 1/4 cups milled oat-bran cereal
1/4 cup chopped nuts (pecans)
1/2 tsp cinnamon
1/4 cup blueberries
1 TBSP Baking Powder
1/4 cup honey
1-1/4 cups Soy Milk
1 large Egg, separated
2 TBSP Olive Oil
Tips
If you allow the completed batter to sit for a few minutes after it is completely mixed, moisture will be taken up by the oat bran.
Store in plastic bag to retain moisture. Keep the muffins in the refrigerator or freezer if they will not be consumed within 3 days.
Directions
Preheat the oven to 425 F. Line muffin tin w/paper cups.
In food mill or blender,combine the oat-bran cereal (flour), nuts, cinnamon and baking powder. Mix the milk, honey, egg yolk and oil together and blend w/dry ingredients.
Beat egg white until peaks form. Fold into batter. Add blueberries.
Fill muffin cups 3/4 full w/batter
