Ingredients

1/2 tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
1 tbsp minced lemon rind
1/2 tsp EACH salt and pepper
1 medium zucchini, chopped
1 medium bell pepper, chopped
1 cup pearl barley
2.5 cups chicken or vegetable broth
1 cup frozen vegetable blend (opt. not in nutritional calculation)
2 tbsp parsley
Directions
1. Saute onion, garlic, lemon rind, salt and pepper in olive oil.
2. Add zucchini, bell pepper and barley. Cook, stirring, until vegies are slightly softened, about 3 minutes.
3. Add stock/broth and bring to boil
4. Cover and simmer until tender, about 25 minutes
5. Add frozen vegetables if using, toss with fork and heat through, about 5 minutes
6. Stir in parsley.
