Number of Servings: 6

Ingredients

    2 c. Prepared Brown Rice (before cooking)
    1 Cup Frozen Corn
    1 Cup Frozen Peas
    .5 Cup Diced Onion
    4 Tbsp. Olive Oil
    2 Large Eggs

Directions

Quickly stir fry onion, corn and peas in olive oil. Add prepared Brown Rice. Stir Fry. Move all ingredients to side of pan and scramble egg. Combine with other ingredients.

May top with soy sauce, though not calculated in recipe. I like to change out the veggies from time to time. Squash, green beans and sprouts make great variations. While I place this in the 'side item' category, I usually have it for lunch or dinner. My husband prefers his with chicken or pork.
