Ingredients

    Olive Oil, 2 tbsp (remove)
    Butter, unsalted, 2 tbsp
    Garlic, 2 clove – finely chopped
    Zucchini, baby, 2 medium
    Onions, raw, 1 medium (2-1/2" dia) cut into 1\4 nch dice
    *Peppers, sweet, red, fresh, 2 medium (approx 2-3/4" long, 2-1/2"
    *Lima beans, frozen, cooked, rinsed under warm water and drained 2 package (10 oz) yields
    3 cups Yellow Sweet Corn, Frozen, (4 ears)
    Course salt and freshly ground pepper
    1 tbl coarsely chopped sage
    1 tbl thyme

Directions

In large skillet, heat oil and butter over medium high heat. Add garlic and onion, cook until translucent, about 4 minutes. add bell peppers, zucchini, lima beans and corn. Season with salt & pepper. Cook stirring occasionally until vegetables are tender, about 10 minutes. Stir in herbs and serve.
