Introduction

This versatile recipe is great for using whatever fruit is in season. This versatile recipe is great for using whatever fruit is in season.
Number of Servings: 12

Ingredients

    5-6 cups berries or fruit of your choice
    2 1/2 cups oats
    1 cup flour (your choice, i like brown rice flour)
    1 1/2 sticks (3/4 Cup) melted butter
    1 Cup packed brown sugar
    1/3 cup honey
    1 tbsp cinnamon
    1 tsp nutmeg
    1/2 Cup grated fresh coconut (optional)

Directions

Preheat oven to 350 degrees.
Mix all ingredients except berries and coconut in large bowel until moist. Spread a thin layer of the mixture on the bottom of a 9 x 13 baking pan. Pour in fruit. Cover with the remaining oat mixture and sprinkle with coconut. Bake for 30-40 minutes, until bubbly and golden. Serve warm or cooled.
