Ingredients

    1/4 C. Orange Juice
    2 T. plus 1 t. Olive OIl
    2 t. Thyme
    2 lbs. Atlantic Salmon
    1 T. Brown Sugar
    1 T. Smoked Paprika (McCormick)
    1 t. Saigon Cinnamon (McCormick)
    1 t. Grated Orange Peel
    1/2 t. Sea Salt
    1 bag (10 oz.) Fresh Spinach

Directions

PREHEAT oven to 400 degrees

MIX orange juice, 2 T. of olive oil and Thyme in a small bowl. Place salmon in large glass dish. Add marinade; turn to coat well. Cover and Refrigerate 30 mins or longer for extra flavor.

MIX Brown Sugar, smoked paprika, cinnamon, orange peel remaining 1 t. of Thyme and sea salt in a small bowl. Remove salmon from marinade. Place in greased foil-lined baking pan. Discard any remaining marinade. Rub top of slamon evently with smoked paprika mixture.

ROAST Salmon 10 to 15 minutes or until flakes easily with a fork. Meanwhile heat remaining 1 t. of Olive OIl in a large skillet on medium heat; Add spinach; cook and stir 2 minutes or until wilted. Serve Salmon over Spinach.
