    1 med onion, diced
    2 clove garlic, mashed
    1 sm bell pepper - any color
    1 lg sweet potato - diced
    1 can black beans, rinsed
    1 can diced tomatoes
    2 c water
    1 mashed chipotle pepper with sauce
    1/4 c fresh cilantro


saute onion and garlic, add remaining ingredients and cook on low until done

    Delicious! I made some changes (prepared salsa and chipotle powder instead of chipotles, added more black beans and chopped carrots) and it is awesome. I enjoy it with some grated cheese on top or cheese and crackers on the side. Would also be good topped with avocado (since it is so low fat). - 12/2/09

  • Changed out the regular diced tomatoes for diced tomatoes with green chili's. Didn't add the chipotle. Used a green bell pepper. Even the hubby loved it! We'll be making it again! - 3/26/11

  • I love sweet potatoes & black beans, but never made them together! I didn't have enough black beans in my cupboard, so I added garbanzo beans, oregano, cinnamon. My family still loved it! Plan to make it again. - 7/5/10

  • I made this and it was great! McCormick makes a chipotle cinnamon rub and I used that in place of the straight cinnamon for a little kick, plus added mushrooms for more texture. - 6/5/08
