Introduction

Number of Servings: 8

Ingredients

    1 lb. Cooked chicken breast, skin removed, cubed
    1 can Southwestern white beans*, not drained
    1 can RoTel with Lime, not drained
    1 can Yellow Sweet Corn, drained
    1 cup White or brown long grain rice
    2 cups Chicken broth
    2 cups Water
    1 cup Chopped celery
    .5 cup Chopped onion

    *you can use whatever kind of beans you wish. Black, navy, white... Experiment or just use what you've got!

Tips

Freezes wonderfully. Make a large batch and freeze individual servings for a quick and handy meal!


Directions

This can be made on the stove top in a 4-qt pan or mixed together in a slow cooker for 4-5 hours set on low. If you make it on the stove top, mix ingredients together, bring soup to a boil, reduce the heat and let it simmer for 20-30 minutes. It is very easy and so tasty! You can even sprinkle on some cheddar cheese and serve it with tortilla chips, if you'd like.
