Introduction

This is my absolute favorite way to roast a turkey for the holidays. It is healthy and easy to make! And OH-SO-JUICY! Herbes de Provence is a seasoning mix and McCormick sells it in the spice aisle. Ingredients

    *Extra Virgin Olive Oil, 4 tbsp
    12 lb. Roasting Turkey, cleaned
    Salt, 1 tbsp
    Pepper, black, 1 tbsp
    Herbes de Provence, 1 tbsp
    poultry seasoning, 1 tbsp
    1 head of Garlic, top cut off
    2 Lemons, halved
    Rosemary, 1 tbsp
    Thyme, fresh, 1 tsp
    sage, fresh, 1 tsp

Tips

I put my turkey in an olive oil coated paper grocery bag and staple it shut. It will self baste and keep the turkey from drying out. You still have to put the bagged turkey in a pan with sides.


Directions

Preheat the oven to 425 degrees,grease with 1 Tbs of the olive oil.
Clean and pat dry the turkey.
Season inside and out with the salt and pepper.
Place the turkey, breast side up, in the roasting pan.
mix the remaining olive oil with the herbes de Provence and the poultry seasoning.
Rub all over the turkey with your hands.
Rub some under the breast skin of the turkey.
Put the garlic head, the fresh herbs, and 1 lemon half inside the turkey.
Squeeze the juice of 1 lemon half over the turkey.
Put the pan, with the turkey, in the oven and put 1 cup of water in the pan.
Roast and baste for the recommended time for the turkey.
