Introduction

Received some persimmons in my produce box and just "winged" this recipe with some items I had on hand. I'm sure this could be modified and made better. Ingredients

    1 persimmon
    1 jalapeno
    1/4 red onion
    3 cloves garlic
    2 tbsp olive oil
    .25 oz lime juice
    Dash salt & pepper, to taste

Directions

Dice persimmon, jalapeno, onion and garlic and place in glass bowl. Add olive oil, lime juice, salt and pepper to taste. Mix thoroughly, cover and let stand in fridge for at least 1 hour.

Serving Size: 1/4 cup serving
