Introduction

Ingredients

1 15-oz can cannellini beans, drained and rinsed
1 15-oz can pinto beans, drained and rinsed
1 15-oz can tomato sauce
1 28-oz can of whole tomatoes with basil, undrained
4 cups can chicken stock*
1 small onion*, diced
½ tsp thyme
½ tsp oregano
½ tsp marjoram
Pinch of red pepper flakes
2 splashes of balsamic vinegar
1 lb mild Italian sausage links, cut into ½ inch thick slices
1 medium kusa zucchini*, cut into chunks
1 bunch kale*, stalks trimmed off and leaves cut into thin shreds
Freshly grated Parmesan cheese for serving (not included in nutrition numbers)
Tips
This recipe is one of many that I have made where the basic ingredients are sausage, beans and greens. I never really ate a lot of dishes with beans in them before, except chili. So this has been a fun way to discover new tastes with basically the same ingredients. If you substituted a different type of sausage, you would get a completely different flavor profile! And the beans provide you with not only complete protein, but also some carbohydrates in a healthy way. As someone who has had bariatric surgery, I am always looking for ways to sneak in protein and carbs without the bloating issues brought on by pastas or breads!
Directions
Plug in the slow cooker. In the slow cooker pot, combine all ingredients, except Parmesan. Stir well to combine and set slow cooker to low. Cook for at least 6 hours.
Serve with fresh grated Parmesan on top.
