Introduction

This recipe is adapted from a recipe by Lois Gordon I found on Allrecipes years ago. I have slightly healthified it by using partly whole wheat flour, changing the original vegetable oil to coconut oil, and adapted it for mini muffins. You could go even further by using nonfat yogurt, fully whole grain flour, and a smaller amount of mini chocolate chips. Ingredients

    1 c. white flour
    3/4 c. whole grain flour
    3/4 c. sugar
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 egg
    1/2 c. coconut oil
    1/2 c. plain yogurt (calorie calculations are for 3%)
    1 tsp Vanilla Extract
    1 c. mashed banana
    3/4 c. chocolate chips.


Directions

In a large mixing bowl, combine your flours, sugar, baking powder, baking soda, and salt. In another bowl mix your oil, egg, yogurt and vanilla. Add your wet ingredients to the dry, then fold in the banana and chocolate chips. Divide into 24 mini muffin cups lightly greased with coconut oil

Bake at 350-375 for 15 minutes.
