Ingredients

    broccoli
    carrots
    cucumber
    cauliflower
    tomatoes
    parsley
    celery
    greenonions
    extra virgin olive oil
    organic apple cider vinegar
    good quality tamari soy sauce
    fresh lemon
    fresh ginger
    raw unsalted pumpkin seeds, almonds, sunflower seeds or other nuts and seeds to suit your tastes

Tips

Very the amounts of soy sauce and lemon juice to personal taste.
Experiment with the nut and seed mixture to include your favorites
All ways use raw unsalted nuts ans seeds
keep nut and seed mixture sepperate from vegetables until right before serving to keep the nut from getting soggy.


Directions

add one tsp of olive oil to frying pan at medium heat
them to frying pan add raw almonds,raw pumpkin seeds and raw sunflower seeds
saute for 5 minutes until the nuts are just starting to brown lightly
then to the cooking nut mixutre add ginger root and 1.5 tsp of good quality tamari soy sauce keep the frying pan on heat until most of the soy sauce has evaporated and is coating the seeds and nuts then removce from heat and let cool for 10-15 minutes or until the nuts become cruchie again
in a lagre bowl add remaining olive oil,lemon juice , apple cider vinegar and soy sauce. wisk mxiture together
then add chopped tomatoes,celery ,parsley,carrots, auliflower, cucumber and broccoli then toss the mixture together
top with chopped green onions and nut and seed mixture and serve

Serving Size: 4 side salads or 2 meal salads
