Ingredients

Dough:
2.5 cups heart smart bisquick (plus .25 to knead and roll out)
.25 cup brown sugar
.5 T cinnamon
.5 t nutmeg
1 T vanilla extract
.33 cups vanilla almond milk (feel free to sub out)
dash salt
Filling:
2 T smart balance, softened
2 T brown sugar
.5 T cinnamon
.5 oz walnuts (optional- this is about 7 walnut halves)
Topping:
1 T smart balance
2 T brown sugar
Tips
You can sub out the spices for pumpkin pie spice.
Change up the extract and nuts for different flavors.
Roll with jam for a quick and easy jelly roll.
Add chocolate chips!
Directions
Preheat oven to 375.
Spray 9x13 pan with cooking spray.
Mix together dough ingredients- it takes a little bit, but you should get a fairly stiff thick dough. Knead with the remaining bisquick and roll out into large rectangle about 1/4 inch thick.
Spread the softened smart balance all over, sprinkle with brown sugar, cinnamon, and break up walnuts all over.
Gently roll the dough into a log- press the seam a bit to seal.
Cut the log in half, then halve each log (you cut it into quarters). Cut each quarter in 3 pieces. Place in the baking pan- LEAVE ROOM between them- they will puff up a bit.
Top with the remaining butter and sugar. Bake for 20-25 minutes.
Enjoy warm :)
