Ingredients

    2 cups oats (not quick oats)
    1 cup Greek Yogurt
    2 cups Applesauce
    1 1/2 tsp baking soda
    1/2 tsp baking powder
    2 very ripe bananas

Tips

I may try adding honey or splenda to my next batch


Directions

preheat oven to 400degF

lightly oil muffin tin

Mash banana with baking soda and yogurt

Process oats in food processor or blender until fine powder and transfer to bowl

mix baking powder in with oat flour

add banana mixture and applesauce and stir until mixed

spoon into the muffin tin and bake for 20-25min or until inserted toothpick comes out clean

Serving Size: makes 12 muffins
