Ingredients

    1-1/3 cups diced zucchini
    1-1/3 cups diced carrots
    1 cup chopped onion
    1-1/3 cups chopped sweet bell pepper
    6 cloves of garlic, minced
    2 tablespoons canola oil
    3-1/2 cups pre-soaked Butter Beans (Big Lima Beans) [approximately 1-1/2 cups unsoaked]
    2 tablespoons Chinese Five Spice
    1 teaspoon freshly ground black pepper
    approximately 8 cups of water

Tips

Serve with Jasmine rice. Also, you can experiment with different types of beans. I only used Butter Beans because that's what I had on the shelf.


Directions

Heat oil over medium-high heat in dutch oven. Add zucchini, carrots, onion, sweet bell pepper, and garlic, and saute for 10 minutes. Add Chinese Five Spice and black pepper and saute for about 30 seconds-1 minute. Add Butter Beans and water. Bring to a boil, turn down heat to a low boil, and cook for 1-1 1/2 hours, or until beans are tender.

Serving Size: Makes 8 1-cup servings, approximately
