Introduction

High protein, high fiber and lots of taste in this cooked barley, split green pea and red lentil salad with oil & vinegar, spices, veggies, raisins/cranberries. Add grated cheese or crisply cooked bacon or a chicken breast for a full meal. Ingredients

    Fibre - rinse before cooking.
    1 c. green split peas, cooked 30 mins.
    1 c. barley, cooked 30 mins.
    1 c. red lentils, cooked 10 mins.
    cook all in the same pot, just add lentils at the very end. Rinse/cool/drain before adding dresssing.

    Dessing - mix together
    1/4 c. extra virgin olive oil
    1/4 c. sweet white wine or sweet rice vinegar
    1/4 c. dried parsley/mint combination
    1/4 c. fresh cilantro chopped

    Add diced veggies:
    1/2 c. ea red onion, celery, carrot, pepper, corn of your choice/combination
    1 can drained/rinsed chick peas or romano beans or bean of your choice.

    Salt and pepper to your taste.

    Optional Toppings when serving:
    shredded cheese
    crisp bacon
    cooked chicken

Tips

This is best chilled after assemblying for 2 hours and better the next day once all the flavours come together.

Split peas may take longer to cook (up to 1 hour) depending on your tenderness desired.


Directions

Pre-rinse the dried peas, lentils, barley before cooking.
Cook split peas and barley together for 30 - 40 mins. Add lentils to the pot the last 10 mins or they will disinegrate.

Rinse in cold water let drain before adding dressing and remianing ingredients
