Ingredients

    1 flax egg: (1 tbsp ground flax mixed with 3 tbsp water)
    1/8 cup coconut oil
    1/4 cup natural peanut butter
    1/4 cup lightly packed brown sugar
    1/4 cup palm sugar
    1 tsp vanilla extract
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp fine grain sea salt
    1 cup rolled oats, blended into a flour or purchased oat flour
    1 cup almonds, blended into a flour or purchase almond flour
    1/3 cup dark chocolate chips
    Flaked Sea Salt - Jacobsen Salt Co.

Tips

I used Natural Sea Salt flakes sprinkled on top after baking. Jacobsen Salt Company is from our local Netarts Bay - excellent hand-harvested salt. http://jacobsensalt.com


Directions

Pre-heat oven to 350. Line cookie sheet with parchment paper.
Make up your flax "egg", flax meal with 3tbls warm water and set aside to thicken.
In mixer, mix peanut butter and oil. Add sugars and beat 1 minute. Add flax "egg" vanilla, salt, baking powder, and baking soda.
Add flours mix until blended.
I chop the chocolate chips into small pieces, add these and mix together.
Form balls about 1 -1 1/2" round, place on cookie sheet. Because there is a low amount of butter/oil these will not spread out well, so flatten them slightly.
Bake for 10 min.
I sprinkled flaked sea salt on top after baking while warm.

Serving Size: Makes 24- 26 cookies
