Ingredients

    1 c. whole wheat or all purpose flour
    1 tsp. pumpkin pie spice
    1/2 tsp. bkg. soda
    1/2 tsp. bkg. powder
    1/4 tsp. salt
    1 c. packed light brown sugar
    1/4 c. vegetable oil
    1 15 oz. can pure pumpkin
    2 large eggs, slightly beaten
    1 c. lowfat granola cereal, crumbled

Tips

The recipe calculater gave me 2 different calorie counts. One was 36 and one 43 so take it for what its worth.


Directions

Preheat oven to 350º. Grease or line mini-muffin pans.
Combine flour, pumpkin pie spice, bkg. soda, bkg. powder and salt in small bowl. Beat sugar and oil in mixer bowl. Add pumpkin and eggs; beat well. Gradually stir in flour mixture. Spoon batter into prepared muffin cups, filling 2/3 full. Sprinkle each with about a 1/2 tsp. crumbled granola and lightly press into batter.
Bake for 15-20 min or until wood pick inserted into centers comes out clean. Cool in pans for 10 min, then remove and cool completely
