Ingredients

    Recipe:

    4 cups whole grain spelt
    2 TBS yeast (I use SAF instant active)
    2 tsp salt
    1 1/2 cups warm water (110 - 115)
    1/4 cup olive oil
    1/4 cup raw honey (you can use whatever honey you like)


Directions

Mix wet ingredients in one bowl
Mix dry in the other
Add wet to to dry
Mix until well blended
turn out onto floured surface and knead until dough is smooth and elastic. Kneading time for spelt is considerably less than wheat and it's very easy to over-knead. Three to four minutes total is all that's necessary.

Place dough into a oiled glass bowl. Cover and allow to rise in a warm location until doubled in size (about 45 minutes).

Punch down. Form into one large loaf or two smaller ones. Place in greased bread pans and allow to rise again (about 45 minutes).

Bake in a preheated 350 degree oven for 25 to 30 minutes.

Cool before slicing.
