Ingredients

    2 C. shredded Apples
    1/2 C. dried Cranberries
    1/2 C Walnut pieces
    1/2 C Canola Oi
    1/4 C. Applesauce, unsweetened
    1/4 C Milk, 1%
    *1/2 C Splenda)
    2 tsp. Vanilla Extract, 2 tsp
    1 tsp. Baking Powder
    2 lg. Eggs
    1 tsp. Cinnamon
    1 C. Whole Wheat Flour
    1 C. white flour)
    1/2 tsp. Salt
    1/2 C. grated raw Carrots
    1/2 C. shredded coconut, toasted


Directions

Preheat oven to 350 degrees. Spray muffin tins with snonstick spray or line with muffin papers. Combine flours, splenda, baking powder and salt in a large bowl. Add apples, carrots, cranberries, and nuts. Mix well. Add oil, applesauce, milk, vanilla, and eggs. Stir till just moist. Fill muffin cups 1/2 full. Bake 20-25 minuts, till tops spring back. Reove from tins and let cool.
