Ingredients

Dry Active Yeast, 4.5 tsp
Water, tap, 4.5 cup (8 fl oz)
Brown Sugar, 1.5 cup, packed(110 degrees)
Baking Soda, 1.5 tsp
*Flour, white, 12 cup
Egg, fresh, 2 large
For Boiling:
4T baking sode
6 c water
Toppings:
Kosher or pretzel salt, poppy seeds, dehydrated minced garlic, cinnamon sugar, parmesan, garlic salt
Directions
Mix first 4 ingredients (baking soda, yeast, sugar, water), then let mixture rest for 5 minutes
Add flour and knead by hand by 5 minutes
Allow dough to rise in lightly greased bowl for 1 hour
Once dough has risen, preheat oven to 550 F
Seperate dough into 36 evenly sized balls
Roll out dough into ropes
Twist each ropes so that dough looks like a piece of licorice
Tie twisted ropes into traditional pretzel knots making sure to press down on dough ends to prevent them from unknotting
Boil for 1 minute in the water and baking soda solution
Place boiled pretzels on lightly greased baking sheets (air bake pans work best)
Brush with egg
Top with desired toppings (toppings are not factored into the nutritional information for this recipe since there is such a wide variety of options)
Bake for approximately 8 minutes or until tops are brown
Check bottoms of pretzels, if still too soft or too light, flip pretzels and bake bottom side up for an additional 2-4 minutes.
