Number of Servings: 24

Ingredients

    Dry Ingredients
    1 cup bran
    1 cup oats
    1 cup wheat flour
    1 cup flour
    2 tsp salt
    1.5 tsp baking soda
    .5 cup splenda
    .5 cup packed brown sugar
    .5 cup sweetened coconut
    Liquid Ingredients
    2 eggs
    2 tsp vanilla extract
    1 serving unsweetened apple sauce
    2 tbsp milk (i used skim)
    4 cups ripe bananas mashed(about 8 bananas)
    1 cup ground TVP (textured vegetable protein 1 cup, then grind then add 1 cup boiling water)

Tips

you can add less sugar and add nuts or raisins instead of coconut which will lessen the grams of sugar


Directions

preheat oven to 350. mix dry ingredients, mix liquid ingredients. Combine.
Fill greased muffin pan 3/4 full. Bake for 20 mins, rotate pan at 10 mins.
