Ingredients

1 1/2 c. flour (half all-purpose, half whole wheat)
1 c. old fashioned oast
1/2 c. brown sugar
2 t. baking powder
1 t. baking soda
1/4 t. salt
2 eggs
2 T. milk
1/2 c. applesauce
1 t. vanilla
3 large ripened bananas, mashed
3/4 c. chocolate chips
Directions
Preheat oven to 375 degrees. Lightly grease muffin tin or line with muffin cups.
Combine flour, oats, baking powder, baking soda and salt.
In a large bowl, beat the eggs & sugar lightly. Add the milk, applesauce, vanilla, and mashed banana. Combine thoroughly but don't over mix.
Stir in dry ingredients until mixed.
Add in chocolate chips.
Spoon into prepared muffin cups, diving batter equally (about 2/3 full) Sprinkle some oats over muffins.
Bake for 25-30 minutes or until golden.
Serving Size: makes about 16 muffins
