Ingredients

    Bananas - 6 ripe, peeled and smashed
    Sucralose 1 1/2 cups
    Egg substitute 1 cup -or 3 large eggs
    1/2 tsp salt
    1 Tbsp Nutmeg
    1 tsp vanilla
    3 cups self rising flour (or 3 cups flour and 1 1/2
    tsp baking powder)
    1 1/2 teaspoons baking soda
    1/4 cup applesauce
    1/4 cup margarine
    1/2 cup water

Tips

Can use part whole wheat flour. Can add 2/3 cup pineapple or nuts if desired


Directions

Preheat oven to 375* and grease muffin tins (or line)
Melt margarine and mix all moist ingredients together - use mixer if necessary to blend in bananas. Mix dry ingredients together and add to moist ingredients - stir only to blend well with no flour showing.
Fill muffins tins 2/3 full and bake 13 minutes.

Serving Size: Makes 60 mini muffins or about 24 regular serving is one mini muffin
