Ingredients

    2 medium onions, sliced into ½ inch thick rings
    3-4 pound beef roast, trimmed of fat and cut into 3-inch square portions
    1 envelope (0.87 ounce) brown gravy mix
    1-½ cups V-8 juice
    2 medium stalks celery, cut into 1-inch slices
    2 carrots, cut into 1-inch slices
    1 package (12 ounces) Reames Homestyle egg noodles

Directions

1. Place onions in 3 ½- to 4-quart slow cooker. Arrange beef on onions, overlapping to fit if needed. Sprinkle gravy mix (dry) over beef. Pour vegetable juice over all.
2. Place celery and carrots on top to allow the vegetables to steam and not become mushy.
3. Cover and cook on low heat setting 8 to 10 hours.
4. About 25 minutes before serving, cook noodles as directed on package. Serve sauce, vegetables and beef over noodles.
