Most "healthy" dessert recipes look healthy at first glance. Maybe low fat and low calories. Maybe high fiber and protein. But on closer look, you'll find they have an insane amount of sugar per serving - 20 to 40 grams! These muffins, though, truly are healthy. Low Cal, low fat, fiber, protein, and only about 9 grams of sugar per serving. You could easily leave out the chocolate chips and cut the calories, fat, and sugar in half, and they'd still be yummy! Ingredients

    1 3/4 cup oats
    1/4 cup whole wheat flour
    1/4 cup flax meal
    3 large egg whites
    3/4 cup unsweet cocoa powder
    1/2 cup cinnamon applesauce
    1 tsp vanilla extract
    1/2 cup Oikos greek honey yogurt
    1/2 tsp cream of tartar
    1 1/2 tsp baking powder
    1 1/2 tsp baking soda
    1/3 cup Truvia sweetener
    1 cup hot water
    3/4 cup semi-sweet chocolate chips

Tips

Try baking for 10 minutes, then sprinkle mini chocolate chips on top of each muffin, and bake for 10 more minutes.


Directions

Preheat oven to 350 degrees. Prepare muffin tins.

Grind oats in a food processor until fine and powdery. Mix all ingredients, except chocolate chips, in a large bowl until smooth. Stir in chocolate chips. Spoon into muffin tins, filling each about half full. Bake at 350 degrees for 20 minutes.
