Ingredients

    Onion raw, .5 cup, chopped
    Garlic, 3 cloves
    Ginger Root, 2 Tablespoons

    Ground tumeric, .5 tbsp
    Curry powder, 2 tbsp
    Olive Oil Pam (0.5g = 0.6sec spray), 2 serving

    Chicken Broth or Bouillon, 4 cup
    Milk, 2%, .5 cup
    Potato, raw, 2 pounds
    Cauliflower, raw, 1 pound
    Summer Squash, 1 medium
    Chicken Breast (cooked), no skin, 16 ounces

Tips

Can serve over rice.


Directions

Cook onion garlic and ginger root in pam about 5 minutes. Stir in tumeric, curry and cook for 2 minutes. add broth and milk, bring to boil, and simmer 5 minutes. Add potatoes and cook for 5 minutes. Add vegetable and cook 15 minutes partially covered. Add chicken, season and cook until chicken white throughout, about 5 mintes.
