1 lb. jimmy dean sausage
.5 c onion
.5 c. green pepper
1.5 c. sliced mushrooms
2 lbs. simply potatoes
16 eggs
2 c. whole milk
8 oz. reduced fat marble-jack cheese
8 oz. full fat marble-jack cheese
salt & pepper to taste
2 pkgs. knorr hollandaise sauce mix (prepared with skim milk and butter)
Tips
Use a deep lasagne pan.

Serving Size is 1/2 cup. Serves 18
Sauté sausage, onion, green pepper and onion. Set aside.
Mix remaining ingredients together (except hollandaise sauce mix). Combine sauté mix with egg mixture. Pour into greased deep lasagna pan. Bake at 350 for 60-90 minutes.
Prepare hollandaise sauce and pour over egg bake.
