Ingredients

1/4 c. Frozen Cut Leaf Spinach, thawed
1 c. Fresh Mushrooms, sliced
1/4 c. White Onions, chopped
1/4 c. Kroger Sharp Chedder Cheese Finely Shredded
2 Large Egg, fresh
2 tbsp. Unsalted Butter
Tips
*You can use fresh spinach, if you have it handy.
*You can use any brand or type of cheese that works for you, I just happen to have chedder. (Note that the type of cheese may change the nutritional value.)
Directions
1.) In a sauté pan over medium heat, take half the butter and sauté the spinach, mushrooms, and onion until the onions and mushrooms are soft.
2.) After the veggie mixture is cooked, take the remaining butter and melt it in the pan.
3.) Crack and whisk the eggs then pour them into the pan over medium-low heat.
4.) Before the eggs are fully set, add back veggie mixture to pan, add half of the cheese, fold over and allow to finish cooking.
5.) Sprinkle remaining cheese on top and serve.
6.) Enjoy!
