Introduction

Makes 10-12 large, very filling cookies. These would even be great for breakfast! Makes 10-12 large, very filling cookies. These would even be great for breakfast!

Ingredients

    1 cup rolled oats
    3/4 cup whole wheat flour (Hodgson Mill)
    1/3 cup ideal brown sugar (xylitol)
    2 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt
    1/2 tsp ground cinnamon
    1/3 cup maple syrup sugar free (maple grove farms)
    1/2 cup applesauce unsweetened
    1 tsp vanilla
    1 tbsp molasses(sorghum)
    1/4 cup chopped dried pitted prunes

Tips

Nuts would also be a good addition but would change calorie count


Directions

Line a baking sheet with parchment paper.

Combine oats, flour, sugar, baking powder, baking soda, cinnamon and salt in a large bowl.

In a separate bowl mix syrup, vanilla, applesauce and molasses.

Add the wet to the dry ingredients and stir to combine. Fold in chopped prunes. Use tablespoon & place on the baking sheet. Bake @ 350 for 8 - 12 minutes until lightly browned. Cool on a wire rack.

Serving Size: Makes 10-12 large cookies
