Introduction

Number of Servings: 6

Ingredients

    12 oz uncooked chunky pasta like penne or bowtie
    1 onion, thinly sliced
    2 garlic cloves, sliced
    1 lb asparagus
    1 cup walnuts chopped
    3.2 oz blue cheese


Directions

1. In a non stick pan, heat onions and garlic on low until caramelized (approximately one hour), stir occasionally.
2. Half way through heat water and cook pasta as directed.
3. On a cookie sheet, lay out the asparagus and walnuts. Lightly coat with cooking spray and bake in a preheated to 375 degree oven until cooked and toasted (approximately 10 minutes).
4. Place cooked pasta in a large serving bowl, add blue cheese and coat.
5. Dice up the cooked asparagus and add the diced asparagus and walnuts to the pasta. Season with salt and pepper to taste. Serve immediately.
