Ingredients

    1 package firm tofu
    1 clove garlic
    1 Tbsp. lemon juice
    1/4 cup nutritional yeast
    1 tsp. salt
    a dash of pepper
    2 tsp. olive oil
    10 fresh basil leaves, chopped

Directions

Press & crumble tofu. Mix all ingredients except olive oil & nutritional yeast by mashing with hands until a ricotta texture. Stir in olive oil & nutritional yeast with a fork. Serve with pasta, salad or a dish of your choice.

Serving Size: Makes 4 - 1/2 cup servings
