1 package 19 oz. Frozen tortellini (and not all tortellini is the same, check and compare the nutrition info!)

1 48 oz. can chicken or vegetable broth

    4 cups water

variety of veggies: carrots, scallions, celery, summer squash, peas, beans, spinach, etc.

and salt, pepper and chili powder to taste.

Sautee scallions and celery for a few minutes (I use a quick spray of olive oil and a little bit of water to steam them up). Salt and pepper the veggies. Add chili powder if you like.

Chop the remaining veggies and toss in and cover with water, cook on high until boiling, add can of broth and another cup or two of water.

Bring back to a boil and then add tortellini. Once soup has hit a boil again, remove from heat and serve.

Should yield 20 1-cup servings.
