Ingredients

    Crust-
    2 cups flour
    2/3 cup powdered sugar
    2/3 cup butter

    Filling-
    2 cups sugar
    1/2 cup flour
    4 eggs, lightly beaten
    2 tsp vanilla extract
    6 cups finely chopped fresh or frozen rhubarb


Tips

The ingredients above are doubled from the original recipe. So you can easily cut them in 1/2 for a smaller quantity.


Directions

Combine flour & powdered sugar; cut in butter until mixture resembles coarse crumbs. Press into the bottom of a greased 13x9 pan.

Bake crust at 350 degrees for 12 minutes.

For filling, combine first four ingredients. Stir in rhubarb; pour over warm crust. Bake at 350 degrees for 35-40 (may take longer since this is a doubled recipe - sometimes I cook for about 8-10 more minutes) minutes or until toothpick comes out clean. Cool on wire rack. Serve warm if desired.

Store in refrigerator.
